Summer in Japan could be melting hot with its high humidity but cooling desserts can brighten up your day. Try the following desserts and you will be a step closer to mastering Japanese summer food!

Kakigori

Kakigori is also known as shaved ice, and it is one of the most popular Japanese desserts especially during summer! You can find kakigori at various locations - from summer festival's food stalls to classy cafes and restaurants, you can find various types, from simple to fun and unique kakigori! Kakigori that you get at summer festivals generally use fruit flavored syrups to make it tasty, but the one that classy cafes and restaurants serve sometime have more toppings such as fresh fruits, shiratama (mochi), and more! It is a perfect dessert for summer!

Tokoroten

Tokoroten, beloved by Japanese people for more than thousand years, is one of the cooling desserts, thin sliced jelly that is commonly eaten with vinegar in Eastern region, or brown sugar syrup in Western part of Japan. Tokoroten is like noodles but made of jelly. If you are looking for a refreshing summer desserts, this is what you should try!

Anmitsu

Anmitsu is a very popular Japanese dessert that usually contains fruits such as oranges, pineapples and cherry, cube of agar jelly, red bean, a scoop of ice cream, and sometimes shiratama (mochi), eaten with mitsu (sweet syrup).
This is a cooling and refreshing dessert, and there are many more unique Anmitsu offered in different cafes and restaurants! Aside from standard Anmitsu, some places offer acai Anmitsu, lemon tea Anmitsu, mango Anmitsu, and more, so it's worth checking out these unique Anmitsu too!

Kuzukiri

Kuzukiri is another refreshing Japanese summer dessert that is made from Kuzuko (a starch powder made from Kuzu plant's root). It's like transparent noodles too! It looks similar to Tokoroten, but Tokoroten is made of an agar weed (or gelidium), so these two are completely different. Kuzukiri does not really have a taste, so people generally eat with sweet syrup, which goes really well with this cooling dessert.

Mizuyokan

Mizuyokan is softer than a standard yokan, which is made of the same ingredients, red bean, sugar but less agar and more water. Mizuyokan used to be a seasonal dessert for winter, and there are few regions that still only eat it in winter. Its sweetness is very elegant, and the texture is very smooth. You should definitely give it a try!

Mizu Manju

Some of you may have seen this cooling looking dessert - this is called Mizu Manju, perfectly cold and refreshing dessert. It is also called "Kuzu Manju" because the transparent part that covers red bean is made of kuzu powder (same ingredient as Kuzukiri!). Sometimes it is eaten with cold water too. Some places offer colorful Mizu Manju, and surprisingly it is not that hard to make them at home! Just looking at the photos already makes me feel refreshed.

Warabi Mochi

Warabi Mochi is a sweet Japanese mochi dessert made of Warabi, or bracken plant, covered or dipped in kinako powder, commonly eaten with brown sugar syrup. Warabi is really expensive now, so kuzu powder or potato starch are generally used as a substitute. It is a very cooling, and has a well-balanced sweetness that makes you unstoppable to eat!
