First of all, what is the difference of nihonshu and shochu?
Both refer to a type of Japanese sake, but to make nihonshu, rice is fermented in the manufacturing process. On the other hand, shochu is made by distilling rice, sweet potato or other base ingredients.

So, in this restaurant, they have a distinct type of shochu called "Kasu tori shochu",which means the shochu is made with sake kasu, the lees that are left over from nihonshu production.

As the base ingredient is rice in this type of shochu, it matches very well with sushi and other dishes using rice. Try out "Kasu tori shochu" and enjoy the perfect duo with your meal!
