1. [Tonkotsu] Hakata Umauma 博多うま馬

This is what is called a tonkotsu ramen, which means the soup is made of pork broth. Their ramen however also have some soy sauce in it which makes the taste even more savoury. This is a sure bet for those of you who like rich-tasting ramen.
It is located on "Kitchen Street" inside of the Tokyo Station. It's the ideal place for a quick lunch between train transfers.

2. [Dipping Noodles] Rokurinsya 六厘舎

Rokurinsya is a popular ramen shop which has really become popular in the ramen world because of its extremely savory type of ramen and tsukemen.
The super deep-flavored soup is made from fish stock and the super-thick chewy noodles are the trademark of Rokurinsya.

3. [Shio] Hirugao ひるがお

"Shio" simply means salt, so this ramen has a simple salt seasoning that doesn't overpower the taste of the other ingredients. It has fine thin noodles made from domestically produced wheat and a rich soup made from fish and scallops.

4. [Miso] Ramen Misozen らーめん みそ膳

This one is made with an original kind of miso soup that blends two different kinds of miso, Hokkaido's red miso, and Kyushu's wheat miso. The combination produces an excellent harmony of taste. Enjoy a traditional taste of miso ramen!

5. [Veggie] Soranoiro Nippon ソラノイロニッポン

"Veggie-soba" is the first vegetarian ramen in Japan, which comes from the idea of offering a "healthy ramen." Fresh vegetables are used to make the soup broth and as toppings.
