It is located in 3 minutes walk from Nerima station. The name "lab" comes from the word "laboratory", and they have been inventing delicious ramen you can only eat there.
You can watch your ramen being made from the counter seats.
No. 1 Menu - "Special Rich Tsukemen"
The popular menu is "special rich tsukemen (特製濃厚つけめん)", 990 yen. The chilled noodles are served with a bowl of hot and rich dipping soup.
Rich and flavorful soup
The brown soup is very thick. The base is pork broth which is cooked in a pressure cooker for 15 hours. Seafood broth made from different kinds of dried fish is added and mixed with the pork broth. It is incredibly rich yet not too heavy.
They use noodles made at one of the most famous ramen and tsukemen shop in Japan. They are very thick and chewy.
Slices of roasted chicken. It is tender and seasoned with many spices.
Slices of grilled pork. Juicy and nicely crispy.
Perfect soft boiled egg. The egg itself is pickled in a soy sauce based sauce.
Mizuna (a kind of green vegetable), negi (shallot-like vegetable), and yuzu peel (a Japanese citrus fruit) come on the side. They can add the texture and refreshing flavors to the rich soup.
Chopped garlic pickled in a soy sauce based sauce is placed on the table. You will love it if you are a garlic lover.
