Take a right from the Shinjuku West Exit and after walking for 30 seconds, you will find "Hokkai Sushi Uni Maru". This store just opened on 5/10, and puts extra effort in serving fresh uni. But, they also serve other sushi made from fresh seafood at a very affordable price.

There are 7 different dishes using sea urchin.
Other than sushi, the have "Uni Tempura" and "Hako Uni Aburi" (Box Of Seared Uni) and a variety of uni dishes.

Uni, is translated to sea urchin, but it is specifically the gonads of sea urchins. What you commonly see in sushi or other dishes is the inside part of the black spiky body. Uni has a distinct rich and creamy flavor, and is commonly used in Japanese cuisine, especially sushi.

A box full of uni is seared using a burner. After it is seared, the uni is wrapped with seaweed.

You Can Choose Either "White Shari (Rice)" Or "Red Shari (Rice)"

At "Hokkai Sushi Uni Maru", you can choose from two different types of rice for your sushi.
On the right hand on the image is the "white rice", which is the typical rice that Japanese people eat, and vinegar made from wheat, rice, and corn is mixed with the rice.

The left side is the "red rice" which is rice mixed with the sake lees produced when making Japanese sake. These sake lees are matured and processed into vinegar, so mixing this with rice allows the rice to stay soft.

"Iki Kuruma Ebi" (Fresh Kuruma Shrimp) ¥300
The shrimp is taken right out of the sink, so it is super fresh!

It is recommended to choose the white rice with Kuruma shrimp.

Maguro (Tuna) ¥200

For sushi that has a rich taste like maguro, the red rice is recommended!

Another distinct characteristic about this restaurant is that the sushi comes in a bigger size than usual sushi restaurants!
