Gantetsu - Waseda, Tokyo : Ultimate Tuna Based Ramen You Should Try!
There are thousands of ramen shops in Tokyo and each of them has their own specialty. Out of them, Gantetsu serves unique ramen which consists of tuna broth based soup, which is popular and worth trying!

Gantetsu (巌哲)

Gantetsu is a popular ramen shop near Waseda University, a 3-minute walk from Waseda station. There is often a long line at lunchtime.
They only have counter seats where you can enjoy watching your ramen being made. The owner had been working at one of the most famous ramen shops in Osaka, and then opened his own shop in Tokyo.
Specialty ramen "Shibishio"
This is their popular menu called "Shibishio" (990 yen).
"Shibi" stands for "shibibushi" which means dried tuna, and "shio" means salt.

The soup is incredibly good. This clear soup is made from various kinds of broth mixed together, such as chicken, kelp, and of course, tuna. You can enjoy the elegant, sophisticated flavors.
Noodles
They also make a great effort on their homemade noodles. The owner even considers noodles as the most important role in ramen.
Toppings
The thick slice of roast pork is fatty and tender.
The ramen has tuna as a topping too! Their tuna is very fresh which is selected from Tsukiji, the Tokyo's biggest fish market. The chef flambes the tuna with sake to remove the fishy smell.
