What is "Dashi"(ダシ)...?

"Dashi"(出汁) is an ingredient that you can't forget when making any Japanese dish. Dashi is a clear soup which is usually made by boiling kombu seaweed, dried sardines, Katsuobushi, and shitake mushrooms.

Oden Ore no Dashi: おでん俺のだし

Ore no Dashi (おでん 俺のだし), which means "my dashi", procures a unique food experience in Tokyo.
It's a little bit like a tapas bar, since you get to try a wide variety of small dishes. There might be a queue when you head there, but just know it's because the food is awesome, and the price is reasonable. You'll get hooked too!

Okaka: おかか

From 2 minute walk from East side of Shinjuku Station, at Okaka, you can experience the most modern way of tasting dashi. Okaka shaves fresh katsuobushi every day in the restaurant and serves them as shabu shabu broth.

From the moment the broth starts to boil, you can't resist your appetite because of the so good smell of dashi!

Dashihazuke En: だし茶漬け えん

Directly located from Tokyo Station, you can have one of the most comfortable Japanese dishes at Dashichazuke En. You get to choose various kinds of dashichazuke such as tuna sashimi, tempura, and any Japanese dishes you could imagine.
