The restaurant is famous for its crab hot pot cuisines that are divided into two types: kanisuki and kanishabu. The difference is that for kanisuki, the crab is cooked with the shell whereas kanishabu is cooked without. Both of the hot pot dishes are filled with fresh vegetables cooked in a special broth full of umami that comes from natural ingredients. These hot pots are the main dishes that are part of course meals of many servings. They range in price from about ¥4,000 to ¥8,000 per person.
Cooking the crab takes only a minute or two, at which point the crab becomes redder and the flesh becomes very soft. The crab comes with a dipping sauce of ponzu, which is a soy based sauce that has some essence of Japanese yuzu lemon in it. The citrusy and savoury taste goes perfectly well with the crab and vegetables.
You can order a la carte as well. This dish of king crab sashimi is very popular. It is ¥2,500.
This boiled full king crab is ¥5,000 and is for 2-3 people. If you order a la carte, it would be a good idea to order a few plates and share if you are eating there with other people. That is generally how Japanese people do it.
There are some gorgeous assortment plates as well, such as this one in which you find all the treasures of the sea of Hokkaido in one serving. This "Hokkai assortment sashimi" plate is ¥5,300 and is meant to be shared between 2-3 people.
