Sushi Saito

Sushi Saito is run by Takashi Saito and is located on the first floor of Ark Hills. The restaurant only has 8 seats and due to its popularity, it is very difficult to get a reservation.
The restaurant, not only has Three Michelin stars, but it also got a gold award from Tabelog, and was named one of Asia's top 50 restaurants by Restaurant Magazine.

People report paying between ¥10,000 to ¥15,000 for lunch and ¥20,000 to ¥30,000 for dinner.

Here is the restaurant's information. For travellers, reservations are only accepted through your hotel concierge.

Chef Saito makes sure to use the freshest and in-season ingredients in order to serve unforgettable sushi. Congruent with the Japanese mindset, the sushi may seem like a simple dish to prepare, but it takes years and years to master this art. Seeing the precision with which the chef cuts the neta (sushi toppings), and the dexterity with which he prepares the rice, you know not everyone has the patience and diligence to become sushi masters.
Each piece of sushi is prepared with the uttermost care and with the freshest possible ingredients. As shown above, the fatty tuna is incredibly tender, and given that each piece is served to you slowly one by one, you really have the time to savour each one and appreciate the flavour and texture.
Uni, when very fresh, is a lot more like a savoury treat than seafood. It is like seawater infused cream and coats the palate with velvety flavours.
The sushi dishes are served in a precise order in which a momentum is slowly built up and each dish complements the next one beautifully.
Using the chefs's savoir-faire, the fish is served raw, aged or grilled to bring out its optimal taste.
The chef masters perfectly the art of combining flavours in order for them to come together in the most beautiful and delicious way.
Although this may seem like an egg pudding, it is simply an omelette with a slightly sweet taste. It is the most perfect way to end the meal beautifully.
Seeing the chef at work is a pleasure in itself, getting to taste his elegant cuisine is an honour!

If you have the chance to eat at this Sushi Saitou, count yourself one of the lucky ones. A reservation is near to impossible to get and is any gourmet's dream to try this refined cuisine at least once. Have a lovely dining experience!
