The southern part of the famous Inogasira Park is in Mitaka. The Studio Ghibli Museum is located within the park. Chuka Soba Mitaka
Mitaka is somewhat of a ramen place so if you're looking for something to eat that could be a good choice. A particularly popular joint is Chuka Soba Mitaka, located just a 3-minute walk from Mitaka Station. Their ramen is soy-based and made with housemade noodles, and it's only ¥450!
