Ukanmuri: Delectable Hakata Ramen In Nerima, Tokyo

4 types of noodle dishes to try at Ukanmuri

At Ukanmuri, you can enjoy four types of noodle dishes. Each dish looks tantalizing! It was a hard choice but we tried the Suihanki Ramen.

A delectable chicken-based ramen

This creamy chicken broth ramen was ¥750, and we added a soft-boiled egg for an extra ¥100.
ukanmuri_spoon
To make the soup stock, Ukanmuri uses the meat part of the chicken as well as the bones, which gives it a particularly deep umami flavour. It only needs to be lightly seasoned to get that perfect taste from natural ingredients.
ukanmuri_noodles
These are some typical delicious noodles that are found in the Hakata style of ramen. They are straight and have a low water content so they have a stronger wheat taste than the average ramen noodles. These noodles were a perfect match for the creamy soup!

3 types of meat

You'll find three types of chicken meat in your bowl. This one is chicken breast cooked sous-vide (low heat for a long time). The sous-vide cooking method makes the meat extremely tender.
chicken_skin
There are also some chicken thigh pieces with the skin on them. Apparently, they are dried for one night before being cooked which is why the skin is crisp.

Finally, there are some very juicy "tsukune" chicken meatballs.

As a seasoning, there is some "yuzu kosho" which adds a nice fresh lemony taste that goes so well with the three types of meat.

The perfect egg topping

With the three kinds of chicken meat, this ramen bowl is satisfying without any extra topping, but this egg, perfectly cooked to the point that the white is hard and the yolk is creamy was a really nice addition!

A warm wooden interior

There are seven counter seats and four table seats in the restaurant, so you can enjoy going there alone or in pairs. The chairs, counter and tables are all wooden, which brings out a nice warmth.
