Shirosaka: One of the 50 Best Restaurants in the World


The restaurant is famous for its "tapas style"; in Japanese known as Kappo-ryori, kaiseki's less formal relative.

Shirosaka's owner, chef Hideki Ii, is responsible for the delicious menu that mixes traditional and modern techniques to create a highly personal style of kappo-ryori.
Hideki has worked in Australia at Tetsuya's, a worldwide renowned restaurant in Sydney and also in the U.S., as a chef for UN ambassador in N.Y. He then returned to Japan and opened Shirosaka in 2014. The restaurant is currently listed as one of the 50 Best Restaurants in the World.
Although modernized, the cuisine still follows the kaiseki traditions; dishes change about every two weeks as seasonal ingredients become available, allowing for a new experience with each visit.
Besides the delicious kaiseki course, the staff is also specialized in pairing wine and sake with the dishes.
Below you can watch the preparation of freshly grated wasabi added to the delightful fizz of Ichinokura Brewery’s Hanameku Suzune Sparkling Sake. ⠀
The mixture produces a creamy, foaming reaction that adds fun to the experience.
