The chef at 'Chiso Sottaku Ito' is an absolute master of dashi (broth), which is made at the restaurant using the famous fresh soft water from Hiroshima to draw out the flavor of specialty konbu and 'kezuri bushi' (dried fish, shown above). The dashi is masterfully incorporated into the seafood-based cooking to create absolute masterpieces of flavor. Courses are ¥10,000, ¥13,000, or ¥15,000. Drinks are charged separately, and can be chosen from a selection of items including a great menu of local sake.
Access / Reservations
Chiso Sottaku Ito can be accessed via the street car, and is located about 6 minutes from Chuden-mae Station. Reservations are necessary, as the restaurant is quite popular.
