'Shodai' in Ebisu, Tokyo Serves Curry Udon With a Peculiar Topping!


There's a seemingly normal udon restaurant in Ebisu, Tokyo that serves a very unique bowl of curry udon with a most peculiar topping. It looks like whipped cream, but is it??

located just 2 minutes away from Ebisu Station, 'Shodai' is a relaxed restaurant that serves a menu of delicious, 手打ち'te uchi,' or hand-made noodles. There's even a corner with a window that lets customers watch the chef as they make the noodles.
The restaurant's most famous item is something called 'White Curry Udon,' which is something you won't see anywhere else.

Is that whipped cream??

This is the dish that made Shodai famous; the 'White Curry Udon.'
The top of the dish is covered with what appears to be whipped cream. However, upon closer inspection...
It's actually a white potato mousse!
The mousse is made by steaming potatoes, pressing them through a strainer, adding cream and soba dashi, and putting the mixture into a pressurized culinary foam canister.

The curry roux is made from 20 spices

Underneath the whipped topping, the curry udon itself is made with a beef curry roux of 20 different spices. The curry is on the spicier side and has a delicious full-bodied flavor. The strong flavor and spice are perfectly balanced by the potato mousse, and the genius of the unconventional pairing becomes apparent once you try it!

Handmade noodles

Let's not forget about the handmade noodles, which are beautifully chewy and flavorful in their own right. The soup clings to the noodles as you slurp them, making for a perfect curry udon experience.
