One of the biggest differences is the way you cook.
If you have ever been to Okonomiyaki restaurant in Osaka, you might have experienced cooking Okonomiyaki on a hot plate and mixing all the ingredients before cooking. For Hiroshimayaki, Hiroshima's Okonomiyaki, you don't mix ingredients! Instead they make layers and put ingredients on top of each ingredients. Also the batter is quite different too- they put thin layer of batter that looks like a crepe on top of cabbage and noodles!
In terms of sauce, Osaka's Okonomiyaki is slightly spicy, but sauce used in Hiroshima's Okonomiyaki is sweet.

Micchan Sou-honten

Beloved by locals, this is probably the most widely recognized Okonomiyaki restaurant in Hiroshima. Their simple yet savory taste that is created from the combination of sweet cabbage, crispy Chinese noodles with their original sauce called "Micchan sauce"...it's beyond amazing. You will never forget their delicious Okonomiyaki and will definitely want to come back. Around a 5 minute walk from Hacchobori station.

Denko Sekka

Just a 2 minute walk from Hiroshima station, Denko Sekka offers satisfying Okonomiyaki experience! They also have teppanyaki menu where you can enjoy their oyster and Hiroshima's pork called "Momiji Pork".
Their Okonomiyaki is so tasty and tender - they put fluffiest egg around Okonomiyaki and use shiso leaves to add accent to its mild taste. This place was featured on Michelin Guide Hiroshima too, which explains how good and worth trying their Okonomiyaki is. If you are looking for a place to have Okonomiyaki near Hiroshima station, you should definitely stop by!

Daichan

Located just a 5 minute away by walk from Hiroshima station, Daichan specializes in delivery service. However, you can eat at this restaurant! With its modern interiors that creates clean and welcoming atmosphere, you get to choose how you want to eat your Okonomiyaki: on a hot plate or normal plate. Their Okonomiyaki uses lots of bean sprouts, which adds crunchy texture and satisfaction. It goes really well with beer too, so if you are visiting, try their Okonomiyaki with beer.

Hassho

You watch, enjoy, eat, and taste. You can have a fun Okonomiyaki experience - you get to watch the chefs make Okonomiyaki in front of you! Their "Okonomiyaki-soba Nikutama" is a must try dish. This place is popular for their use of a double-yolked egg which is believed to bring luck. You might encounter a long queue, but believe me, their Okonomiyaki is definitely worth trying! Around a 10 minute walk from Kanayamacho, you wouldn't want to miss this out.

Reichan (麗ちゃん)

Cooked and served by certified chefs, they have been offering exquisite Okonomiyaki using fresh cabbage and by unique cooking style ever since they opened their first store in 1957. They value freshness of vegetables, chewiness of noodles, stable temperature of hot plates, and the butter's stickiness. You can also take out their Okonomiyaki too. They have lost of unique menu including kimchi Okonomiyaki, mozzarella cheese Okonomiyaki, oyster (winter only!) and more.
Just a 3 minute walk from Hiroshima station!

Okonomiyaki is so delicious that you can have so many. For Hiroshima style Okonomiyaki, you can enjoy ingredients way more than Osaka's Okonomiyaki, where they mainly use batter and less ingredients.
