What is Ozaki Wagyu Beef?

retina_shutterstock_344681603
Mr. Muneharu Ozaki is a farmer in Miyazaki Prefecture, who specializes in beef cattle production. Ozaki beef refers to beef from cattle raised on a single farm owned by him. Although Miyazaki beef is known as one of the best wagyu in Japan, the beef that he produces is even more special. This is because he feeds specially mixed food made up of 15 different kinds of feed, and uses no antibiotics or conservatives.

Also, another distinct characteristic of Ozaki beef is that while most wagyu in Japan are slaughtered after 28 months, Ozaki cattles are slaughtered at around 28 to 36 months. This makes the beef have a more sweet taste, and makes the beef incredibly tender.
